It depends on there you go….
They can be very shy, two student, well one of them started up a conversion with me at a metro station. While one of them was ok freely talking the other could not even even talk or look at me because she was so shy.
On the other hand it goes to the other extreme they can also be very jealous and annoying, at other times I have seen young girls on top of tables and bars dancing away like anyone business.

It varies. Most Chinese girls will be very shy, quiet and reserved, but if you meet Chinese girls who are very influenced by Western culture, they may seem very annoying . Here in Singapore, my Chinese friends can’t even speak Chinese properly, much less act properly. For me, i’m Korean-Chinese, so i’m not sure if you’ll count me as Chinese, but i’m very reserved around strangers face-to-face.
Especially because you’re not Chinese, the woman may find it a little difficult to warm up to you.
